Day #7 Sugar Detox Challenge March 7, 2015

Happy Birthday to BJ!!!

The day started off with some eggs for breakfast. 
The first is Liney's Broccoli Feta Scramble with Avocado. 




The second is Tamra and Jane's Spinach Eggs with a Southwestern Kick.






We had a Saturday night Prince Family dinner. I fixed the Teriyaki Pork Veggie Rolls, recipe in the February post in this blog that announced our Sugar Detox Challenge. 


I used asparagus instead of green beans and added apple slices. 
Here's some prep pictures:

Cut the veggies in strips and cut the apples in thin slices.





Pound the pork cutlets to make them thin.
Lightly flour the pork on both sides.





 Boil the veggies in water for 3-4 minutes.
Drain the water off the veggies and pat them dry with paper towels.


Divide the veggies into little bundles.



Wrap a pork cutlet around the veggie bundle. 
Fasten with a short wooden screwer or toothpicks.



Fry with a little Avocado oil coating the bottom of a large skillet til browned. 
Add the ½ soy sauce ½ water mixture to the pan to coat rolls.


Serve over leftover veggies and apples and a little brown rice.

  1. Delish! And smaller portions of healthy foods like this fill me up nicely. Joe said it was the best meal he'd ever eaten :)
