Day #2 Sugar Detox Challenge March 2, 2015

Sounds like we got off to a good start Sunday! 
Here's some great take-aways from Day 2.

Here's a favorite breakfast recipe from Mom:

SPINACH EGG

In a frying pan, put half water and half vinegar to cover bottom of pan about 1/4 of an inch deep. Place 3 big handfuls of fresh spinach in pan. 


Cover pan with lid. Bring to boil and cook a couple of minutes until the spinach wilts.



Flip spinach over, make holes in the spinach to put eggs in. Break eggs into spinach holes. 




Cover pan, lower heat, steam eggs till white forms over yolks. Salt & pepper to taste. 
Sprinkle sliced almonds and cinnamon on top.  Don't overcook eggs.
