The Sugar Detox Challenge--March 1-10, 2015



The excitement builds as the sun sets in the Pacific Northwest,
and we pause wherever we may be to contemplate  
the coming dawn of Day #1 of the Sugar Detox Challenge. 


This Mother Daughter Duo are ready.


Teriaki Veggie Pork Rolls

INGREDIENTS
  • 6 thin pork cutlets
  • 18 green beans, ends trimmed
  • 1  carrot, sliced into 18 thin strips
  • 1 red bell peppers, cored and seeded and thinly sliced
  • 2 tbsp vegetable oil
  • flour for dusting
  • salt and pepper to taste

  • Sauce:
  • 2 T soy sauce
  • no sugar
  • 2 T water
INSTRUCTIONS
  1. Bring a pot of salted water to boil and add all the vegetables. Boil for 2 minutes, strain and dry with paper towel. Set aside.
  2. In a small bowl, mix ingredients for the sauce. Set aside.
  3. Take one pork cutlet at a time pounded thin and dust with flour on both sides.
  4. Add 3 green beans, 3 carrots and 3 peppers on the cutlet.
  5. Season with salt and pepper and begin rolling the pork.
  6. Close with toothpicks.
  7. Add oil to pan and when the oil is hot, add pork rolls.
  8. Cook until the pork is golden brown and remove toothpicks (about 8 minutes.)
  9. Add sauce and shake the pan to make sure all sides are coated (about 1-2 minutes).
  10. Turn heat off, and slice rolls into pieces. Serve warm over leftover sliced vegetables.
